Let’s go to a cake shop that is cozy and delightful. It is only a five-minute walk from the south of Tachikawa station.
You may have found such a lovely cake shop on the corner in Paris.
Patisserie JINKE has a unique logo, the design of which is a fishing line and a fishhook of a flounder. The owner of the shop loves fishing.
There are many varieties of fresh sweets, whole cakes and “Cakes” in the showcase. The shop prepares more than twenty kinds of sweets every day. All of them are beautiful and are full of flavor.
From the left on the top: “Ocumare”, a ram flavor ganache-like rich chocolate cake: 550 yen, “Fragonard”, strawberry and berry cream mouse: 550 yen, and “Abricot”, apricot jam and jasmine flavor blanc-manger: 500 yen (All are non-taxed price).
“Cake” is baked in a special cake pan, which has been specially ordered. Every kind of cakes is good for a gift. Cake Erable, maple flavor Aomori-made apple compotes are added into the inside (on the left of the picture) and “Abricot Earl Grey” has apricot and earl grey flavor (on the right of the picture): Both are 1,500 yen (The tax is excluded).
Mr. Kenji Tsutsumi is a pâtissier and the owner of the shop. Ms. Tomoko is his wife and works for the sales and the planning. They have created the shop with full of love. Their deep affection to the shop is shown by the signboard and the lights inside. These beautiful items are made of brass by a craftsman of FUTAGAMI, a casting maker in Takaoka, Toyama.
After graduating from Tsujicho in France, one of the famous cooking schools, Mr. Tsutsumi had worked for several shops in Tokyo, including eight-year experience as a pâtissier at Hotel de Mikuni. He has opened his shop since October 2019 in Tachikawa, where he was born and grew up. “I am from Tachikawa-Nishikicho, so I really wanted to open my shop in the south area.”, he said enthusiastically.
The origin of the name of the shop is witty. “I was thinking about a name that uses three letters so that everyone can easily remember,” says he, “My wife advised me if I read my name from the end. “Ji” “N” “Ke”, and I decided the name.” Mr. Tsutsumi also says, “I want to make cakes, the taste and decoration of which are as simple as possible and off course they are delicious. I will make all the cakes and sweets more delicious and tasteful with use of only two or three kinds of ingredients. Following not only a recipe book, but I see the weather and the condition of the materials I will use today. I want to improve my skills to provide delicious sweets for my customers.” We felt the sense of his creativity. It is said that the results of the fishing depend on the weather, the season, and the tide. As a pâtissier, who loves fishing, he must be a very thoughtful and determined person.
